Jana Ford Digby returns to Oaklawn for the 2018 live racing season as Track Kitchen manager and will soon "start serving up many of her family's famous recipes from their popular restaurant, Ed's Place," states the press release. "In addition, it will now be easier for the public to enjoy these 'country cooking' favorites during the season, because the track kitchen is now fully accessible to all patrons."
Digby's family owned and operated Ed's Place for more than 30 years and among the recipes she will be offering is her great-grandmother's Southern pan fried chicken. Other mainstays on the menu will be cook-to-order breakfasts, which include country potatoes or grits, country ham biscuits, biscuits and gravy, and daily lunch specials, such as meatloaf and BBQ brisket. Digby began working in the restaurant at age 11 and learned everything she knows about cooking from her mother, Barbara Ford, and older sister, Robin Ault.
"We're thrilled to have Jana returning and are excited to now have the track kitchen accessible to the public," Director of Food & Beverage Belinda Castleberry said. "We're hoping her experience and popular family recipes will help make the track kitchen a popular eating spot for not only the horsemen, but for the entire Hot Springs community."
The initial track kitchen hours will be 6 a.m. to 1 p.m. everyday beginning today. Once the track opens on Jan. 12, the hours will be 5 a.m. until after the last race Thursday-Sunday and 5 a.m. to 1 p.m. Mondays-Wednesdays.
