Oaklawn Park adds to staff

William Green, a recent graduate of the Culinary Institute of America, has joined Oaklawn in the newly created position of kitchen manager.

In his position, Green will work closely with executive chef Alex Harpo in handling large events and managing the day-to-day duties of the main kitchen and its staff.

Although he is a recent graduate, Green comes to Oaklawn with an extensive background. He did an eight-month externship at Victoria & Albertis, an award-winning, fine dining establishment in Walt Disney's Grand Floridian Resort & Spa, assisted with wedding catering and large events at Lola's Café in Poughkeepsie, N.Y., and was most recently lead line cook at Truffles Restaurant in St. Louis.

He holds a degree in culinary arts and restaurant management.

"William has jumped in with both feet and is already doing an outstanding job," said director of Food & Beverage Belinda Castleberry in the release. "He's very enthusiastic about the job and brings a wealth of experience that will be valuable to the food and beverage department."

Green has relocated from St. Louis to Hot Springs. He is engaged to Lauren Silmon.

Natali Nimmo has returned to Oaklawn as manager of Training and Guest Services.

Nimmo, who helped lay the ground work for Oaklawn's current training program, previously held the position from February 2009 to September 2012.

She had most recently been regional management training coordinator for Newk's Eatery.

"I'm very excited to be back at Oaklawn," said Nimmo. "Training is always evolving and I look forward to using everything I've learned over the last two-and-a-half years to continue growing Oaklawn's program. One of our core values is fun, so I want to make training fun and inspire the Team Members to use what they've learned."

Nimmo, a native of Aschaffenburg, Germany, earned a B.A. in Management and Administration from Balthasar-Neumann Fachhochschule in WĂĽrzburg, Germany.

She has an extensive background in management and training, working with such restaurant chains as Applebee's, Cracker Barrel and Olive Garden.

She worked for Camino Real Hotel, a four-star property in El Paso, Texas, and was food and beverage director for the Hot Springs Country Club.

"We're very happy to have Natali back on the Oaklawn team," said director of Human Resources Kelli Mussa. "Her knowledge and experience will be valuable in moving our training and guest services programs forward."

Nimmo lives in Hot Springs with her husband, Clay.
